Ingredients

refined coconut oil

sugar or coconut sugar

egg, room temperature
(or 1 flax egg: 1 tablespoon flaxseed meal + 3 tablespoons water)

teaspoon
pure vanilla extract

teaspoon
baking soda
½
teaspoon
sea salt
2 ¼
cups
gluten-free flour

cup
chopped dark chocolate (about 6 ounces)
Flaky sea salt, optional
Instructions
Mix the coconut oil and sugar until smooth.
Add the egg or flax egg and vanilla extract, and stir until smooth.
Add the gluten-free flour, salt, and baking soda to the wet ingredients.
Mix until well incorporated.
Fold in the chopped chocolate.
Preheat the oven to 350°F.
Scoop the dough onto a baking sheet.
Bake for about 10 minutes, until the edges begin to turn golden brown.
